The old rules primarily red wine with red meat and white wine with fish and poultry — don't take into consideration the complexity of today’s multi-ethnic and subtly flavored foods and the corresponding wide range of wines from around the world that are now conveniently available to almost everyone.Some of the classic wine pairing with food will always remains, therefore follow the curiosity and feeling to experiment red wine with fish or any other, your palate and sensation will dictate the wine to choose.
Part of what I love about wine is that pairing it with food is more art than science.I love this magic moment while standing in my kitchen opening the bottle, analysing the fragance, aroma, character and subtile flavor of the wine to inspire me to find the right ingredient to prepare my menu, thoses moments are always unique , a real pleasure.So while the goal of this food and wine pairing page is to provide a great starting point, finding your own preferences, the experiences will quickly take over.By helping  you select and enjoy the right wine for any occasion
I will recommend throughout my wine dinner ,some of the best new world, classic and millesime wines I have tasted and selected to pair my creative dishes.
